Baked Blueberry French Toast

1 (lb.) loaf Italian bread (cubed)

1 teaspoon ground cinnamon

1 (8 oz.) pkg. cream cheese (cubed)

1 cup fresh or frozen blueberries

10 Nature's Yoke eggs

2 cups milk

1 teaspoon vanilla

1/2 cup maple syrup

Methods/steps

1.  Place half of the bread cubes in the bottom of a greased 9 x 13 inch baking pan.  Evenly sprinkle 1/2 teaspoon ground cinnamon over the cubes.  Next add the cream cheese and blueberries, then top with remaining bread cubes, sprinkled with the other 1/2 teaspoon ground cinnamon.

2.  Beat together eggs, milk, vanilla and maple syrup and pour over the bread mixture.  Cover and refrigerate for 8-12 hours.

3.  Bake covered at 350 degrees for 30 minutes, then remove cover and bake another 30 minutes uncovered until golden brown and the center is set.  Serve with maple syrup!
