Baked Breakfast Sandwiches

8 slices bread
4 slices Swiss cheese
choice of meat: ham, treet, bacon
8 Nature's Yoke eggs
2 cups milk
1 teaspoon dry mustard
black pepper to taste
1. Butter each slice of bread on one side. Place 4 slices, buttered side down in a greased 8 x 8 inch baking pan.
2. Add the cheese and desired meat and top with remaining 4 slices of bread, buttered side up.
3. Beat the eggs and milk together, then add the mustard and pepper and pour over the sandwiches.
4. Bake at 350 degrees for 40-45 minutes or until a knife inserted near the center comes out clean.
