Breakfast Muffins (wholesome)

Ingredients

3 cups whole wheat flour

2 cups oat bran

2 teaspoons baking soda

1/2 teaspoon salt

2 teaspoons ground cinnamon

1 cup honey

1 cup lowfat milk

3 cups finely shredded carrots

2 large apples (shredded)

1/2 cup raisins

1/2 cup chopped pecans

1/2 cup olive oil

4 Nature's Yoke eggs

1/2 teaspoon vanilla

Methods/steps

1.  Mix all ingredients together and spoon batter into greased or paper-lined muffin pans.

2.  Bake at 350 degrees for 25-30 minutes.

(Carrots, apples and raisins along with the milk and oil can be chopped very nicely in a blender.)
