Broccoli Cheddar Casserole

8 cups fresh or frozen chopped broccoli
1 cup chopped onion
3/4 cup margarine
12 Nature's Yoke eggs
2 cups whipping cream
2 cups shredded cheddar cheese
2 teaspoons salt
1 teaspoon black pepper
1. In a large skillet over medium heat, melt the margarine and saute the broccoli and onion until crispy tender.
2. Beat the eggs and add the cream and 1 3/4 cup shredded cheese. Stir in the broccoli mixture along with the salt and pepper.
3. Pour the mixture into a greased 3 quart baking dish and place the baking dish in a larger pan filled with 1 inch of water. Bake at 350 degrees for 45-50 minutes or until a knife inserted near the center of the casserole comes out clean.
4. Remove from oven and sprinkle with the remaining cheese and let the casserole set for 10 minutes before serving.
