2 cups cooked ham (chopped or ground) 1/2 cup chopped onions 1/2 cup finely chopped green peppers 2 tablespoons vegetable oil 8 flour tortillas (7-inch) 2 1/2 cup shredded cheddar cheese 4 Nature's Yoke eggs 2 cups light cream 1 tablespoon all-purpose flour 1/4 teaspoon garlic powder 2-4 drops hot pepper sauce salsa sour cream Methods/steps
1. Saute ham, onions and green pepper in oil until tender. Put 1/3 cup of ham mixture in the center of each tortilla and top with 3 tablespoons shredded cheese. Roll up each tortilla and place seam side down in a greased 9 x 13 inch baking pan. 2. Beat eggs well, then add cream, flour, garlic powder and hot sauce and mix well. Pour mixture over tortillas and cover and chill overnight or for 8 hours. 3. Bake uncovered at 350 degrees for 40-45 minutes or until knife inserted in the center comes out clean. 4. Sprinkle remaining cheese over enchiladas and serve with salsa and sour cream. Reviews
