Crab Casserole

Ingredients

10 slices white bread (cubed)

1 lb. crab meat

1 cup mayonnaise

1 cup celery (chopped)

1/2 small onion (chopped)

1 medium green pepper (sliced)

1 tablespoon parsley

1 tablespoon lemon juice

salt and pepper to taste

4 Nature's Yoke eggs

3 cups milk

1 can mushroom soup

1 cup parmesan cheese

Methods/steps

1.  Put 1/2 of bread crumbs in the bottom of a 9 x 13 inch greased baking pan.

2.  Combine crab meat, mayo, celery, onion, green pepper, parsley, lemon juice, salt and pepper.  Arrange this mixture over the bread cubes and then add other half of the bread cubes on top of crab mixture.

3.  Beat eggs and milk together well and pour over the casserole.  Cover and refrigerate overnight.

4.  Cover and bake at 350 degrees for 1 hour.

5.  Heat mushroom soup slightly and add cheese, mixing well.  Remove casserole from oven and pour mushroom soup mix over top.

6.  Return to oven and bake at 425 degrees for 5-10 minutes until cheese is melted.
