Easy Spinach Bake
At a glance
2 tablespoons margarine
10-12 green onions (chopped to make 1 cup)
1 tablespoon minced garlic
1 (16 oz.pkg.) frozen spinach, thawed and drained
1 1/2 cups small curd cottage cheese
1 cup Bisquick
2 cups milk
1 tablespoon lemon juice
1/2 teaspoon black pepper
6 Nature's Yoke eggs
1/2 cup Parmesan cheese
1/2 teaspoon nutmeg
1. Melt margarine in a skillet and saute onions and garlic until onions are tender. Stir in thawed spinach.
2. Grease a 9 x 13 inch baking pan and layer spinach mix and cottage cheese.
3. Stir Bisquick, milk, lemon juice, pepper and eggs until blended and pour over spinach/cottage cheese mix. Sprinkle with Parmesan cheese and nutmeg.
