Golden Rice Salad

Ingredients

1 1/2 cups uncooked rice

3 cups chicken broth

1/4 cup vegetable oil

2 tablespoons vinegar

2 tablespoons prepared mustard

1 1/2 teaspoons salt

1/4 teaspoon black pepper

1 cup chopped ripe olives (opt.)

3 Nature's Yoke eggs (hard-boiled & chopped)

1 1/2 cups sliced celery

1/4 cup chopped dill pickles

1/4 cup pimentos

1/2 cup chopped onions

3/4 cup mayonnaise

 

Methods/steps

1.  Cook rice in chicken broth and add enough water to keep rice moist.

2.  Mix together oil, vinegar, mustard, salt and pepper and pour over the hot rice.  Set aside to cool.

3.  Prepare remaining ingredients and add to rice when cool and mix well.  Chill thoroughly before serving.
