Creamy and comforting, our homemade vanilla pudding is an easy but elegant dessert for your next dinner party.

Yields8 Servings

 4 cups 2% or whole milk
 5 tbsp cornstarch
 ¾ cup sugar, divided
  tsp salt
 2 tbsp butter
 2 Natures Yoke Duck eggs
 1 tsp vanilla

In a heavy kettle, heat milk to boiling over medium heat, stirring constantly to keep from scorching.

Mix cornstarch, 1/2 cup sugar and salt together in a bowl. When the milk starts to boil, add the dry ingredients and butter, stirring to incorporate. Cook on low heat, stirring constantly, until mixture thickens and bubbles. Cook 1 minute more.

In a separate bowl, beat duck eggs with 1/4 cup of sugar. Stir half of hot mixture into the eggs and mix well. Return to saucepan and heat. Cook 1 to 2 minutes more. Do not boil!

Remove from heat and add vanilla. Pour into serving dish. Cover surface with wax paper. Cool without stirring. Serve with cool whip.
