Make your own lemon poppy seed muffins from scratch!  This is a simple recipe and the muffins are so moist and good.

 3 Nature's Yoke eggs
 1 ¼ cups sugar
 1 ⅛ cups canola oil
 1 ½ cups milk
 ¼ cup lemon juice
 1 ½ tsp salt
 1 ½ tsp baking powder
 1 ½ tsp baking soda
 2 tbsp poppy seeds
 1 ½ tsp pure vanilla extract
 1 ½ tsp almond extract
 3 ¼ cups all-purpose flour

Beat together eggs, sugar and oil. Add remaining ingredients. Mix well.

Fill paper lined muffin cups 3/4 full. Bake in preheated oven at 350 F. for 20 minutes, or until a toothpick inserted in the center comes out clean.

Allow muffins to cool a few minutes in the pan, then remove to wire racks to cool completely.
