Pineapple Upside Down Cake, an American favorite for more than 90 years, is a classic cake with its moist, flavorful topping of pineapple rings and cherries.

Yields1 Serving

  cup sugar
 ¼ cup butter
 1 Nature's Yoke egg
 1 tsp vanilla
 1 ½ cups cake flour
 ½ tsp salt
 2 tsp baking powder
 ½ cup milk
 3 tbsp soft butter
 ½ cup brown sugar
 Pinapple rings
 maraschino cherries

Cream sugar and butter. Add egg and vanilla. Beat well.

Combine dry ingredients and add to batter, alternating with milk.

Spread soft butter thickly on the bottom and sides of a spring form cake pan. Sprinkle brown sugar over butter and arrange well-drained pineapple rings over the sugar. Pour batter evenly over pineapples.

Bake at 350 F. for 45 minutes. Allow to cool. Remove from spring form pan and invert on platter. Serve with whipped cream if desired.
