Upgrade a simple can of salmon by creating these moist, flaky Salmon Patties with a crunchy outer crust.

Yields6 Servings

 15 oz can salmon, drained
 2 Nature's Yoke eggs
 ¼ cup milk
 ½ cup cracker crumbs
  tsp coarse ground black pepper
 2 tbsp minced onion
 4 tbsp butter

Break up salmon into small pieces with a fork; add egg, milk, crumbs, pepper and onions.

Melt butter in large skillet. Drop salmon mixture by tablespoons into hot butter and fry a few minutes on each side, or until golden brown.

NOTE: Canned mackerel can be used instead of salmon.
