Combine first 5 ingredients. Knead for five minutes to form soft dough. Cover and let rise for 5-10 minutes.
While dough is rising, make soda water by combining warm water and soda in a bowl. Set aside. In a separate bowl, whisk egg and 1 tsp. water together. Set aside.
Divide dough into 16 pieces. Roll out each piece of dough into a 14-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel.
Dip pretzels into soda water. Place on greased cookie sheet. Brush with egg wash. Sprinkle with kosher salt. Bake at 400 F. for 10-12 minutes.
