Popping with color, bursting with flavor and brimming with texture, this salad will quickly make it to the top of your "favorite salad list".

Yields8 Servings

 10 fresh spinach, washed
 1 cup strawberries, sliced
  red onion, sliced
 2 avocados, chopped or sliced
 2 Nature's Yoke eggs, hard-boiled
 feta cheese, crumbled
Candied Pecans
 1 tbsp butter
 1 tbsp brown sugar
 ½ cup pecans
Dressings:
 2 tbsp honey
 ¼ cup olive oil
 1 tbsp Dijon mustard
 ½ tsp salt
 2 garlic cloves, minced
 ¼ tsp pepper
 ¼ tsp paprika

Candied Pecans:

Heat one tablespoon of butter in a small skillet. Add brown sugar and melt. Add pecans, stir to coat and toast for a few minutes. Spread out on wax paper to cool.

To Assemble the Salad

Place spinach in a large bowl. Add strawberries, red onion, avocado, feta cheese, hard-boiled eggs and candied pecans.

Combine dressing ingredients and drizzle over salad. Toss and serve.
