Bursting with flavor and color, this elegant Spring Salad with Poppy Seed Dressing is a refreshing dinner introduction.

Nutritious and elegant spring salad made with Nature's Yoke organic eggs

Yields8 Servings

 4 cups Romaine lettuce, chopped
 ½ red onion, sliced
 ½ cup celery
 ½ cup craisins
 4 oz shredded swiss cheese
 1 cup cashews
 8 strawberries or cherry tomatoes, sliced
Poppy Seed Dressing
  cup apple cider vinegar
 ¾ cup sugar
 2 tsp mustard
 1 cup olive oil
  tsp salt
 1 tsp minced onion
 1 tsp poppy seeds

Divide salad ingredients evenly onto 8 individual plates. Drizzle poppy seed dressing on top.

Combine all ingredients except poppy seeds and blend in blender.

Stir in poppy seeds. Drizzle over salad; refrigerate remaining dressing.
