Swedish Pannkakor, submitted by a guest contributor, is a favorite food among people of Swedish heritage. Similar to crepes, they are light, but not fluffy, with the perfect little crunch around the edges.
In a large bowl, beat eggs with a wire whisk. Mix in milk, flour, sugar and salt.
Preheat a non-stick electric skillet to medium heat. Melt small amount of butter in skillet. Pour a thin layer of batter in skillet and spread to edges.
Cook until top surface appears dry. Cut into 2 sections and flip with a spatula. Cook for 2 minutes longer, or until golden brown. Fold each pancake in half or roll up. Serve with fresh fruit and whipped cream or maple syrup.
Serve with cheese and meat instead of fruit for a savory choice.
